The portion of TAM you can realistically serve with your current product and reach.

Serviceable Addressable Market is the realistic portion of TAM you could serve given your product capabilities, geography, sales model, and channel constraints. SAM is typically 10-30% of TAM for an early-stage company.

Example

TAM is global; SAM excludes regions where you can't legally operate, languages you don't support, and customer segments your product doesn't fit.
